Chicken Soup

After making honey roast chicken for everyone yesterday, I had the chicken carcass and some meat left. I knew the meat would dissappear before the end of the evening so I decided to make it into a meal before the boys got their greedy paws on it!


Chicken Stock

For this I simply put the chicken carcass in a stock pot with some chopped up carrots, two sticks of chopped celery, a quartered onion and 2 bay leaves. I covered the carcass with water, brought it to the boil and entrusted Ben to turn it off after one hours simmering whilst I escaped to a friend's house for a coffee! When cool, I strained and discarded the bones and veg and was left with chicken stock.

Have decided to make this for the kids lunch as I'm on a low calorie day (alternate day diet) so at least I won't be tempted to eat. Even starving I don't want any meat!

1 onion, chopped
4 carrots, roughly chopped
1 large potato, chopped
Leftover chicken
Chicken stock made yesterday


Cook the onion in butter and olive oil on a very low heat until it starts to caremlise and turn brown. Add the rest of the ingredients, bring to the boil and leave to simmer for half an hour. Optional: Blend the soup, stir in half a cup of cream (i use one of Caleb's little mugs) and reheat until piping hot.

This is just on the hob now, so will feed it to the kids and see what they think. Finger's crossed!

I also made soda bread with Caleb to go with the soup, that's in the oven.
